The extra-circulation cycle is cycled 2-3 times a day according to the process requirements, each time for about 30-60 minutes (the user adjusts the cycle time according to his own process conditions). When the juice is separated from the skin residue, the juice is first pumped away, and then the scraper motor under the tank is started, and the skin residue is discharged through the bottom discharge port of the tank.
The fermenter is usually made of stainless steel 304, which has good mechanical properties, high strength, strong corrosion resistance, no need to set the coating, smooth surface, good sanitary condition, convenient operation and maintenance, and long service life.
The fermenter is composed of a stainless steel tank, a heat exchange jacket, a material port, a cooling belt, a thermometer, a sampling port, a manhole, a clear juice outlet, a turbid juice outlet, and a liquid level meter. The sandwich heat exchanger is honeycomb or ribbon to improve flow. A mechanical slag discharge device is provided to reduce labor intensity and increase labor productivity.
The solid fermenter has two types of cooling: internal cooling and external cooling:
First, the internal cooling type. The heat exchanger is placed in the fermenter, immersed in the fermentation crucible for cooling, and a plate heat exchanger is often used. The cooling loss is small, the heat exchange efficiency is high, and the cooling is uniform.
Second, the external cooling type. A cooling jacket (heat exchanger) is arranged at the upper middle portion of the outer wall of the tank to circulate the coolant in the jacket, and the tank wall is used as a heat exchange surface for cooling, and the coolant in the jacket flows in the jacket.
Advantages of fermenters for winemaking:
1. It can automatically stir and slag, and the scraper moves slowly when stirring, which has little mechanical effect on the material;
2. It can be used as the impregnating fermenter for red wine, and can realize the separation of juice, with various functions and high utilization rate of equipment;

In order to ensure safety, the state has imposed strict requirements on solid fermenters. The solid fermenter needs to be structurally tight and can withstand repeated sterilization of steam. The solid fermenter tank has a smooth inner wall and has superior requirements for corrosion resistance, so that it is more thoroughly sterilized and reduces the influence of metal ions on biological reactions.
High-quality fermenters must have good gas, liquid, solid contact and mixing properties, with efficient heat, mass, and momentum transfer properties. Has good heat exchange properties to maintain the temperature of the bio-reactive zui. There is also a viable piping scale and meter control for sterilization operations and automation. Reduce the energy consumption of solid fermenters while maintaining bioreactor requirements.
When the fermenter is used in winemaking, it is very difficult to perform a thorough sterilizing of the solid fermenter. In order to ensure the quality of work, how can solid fermenters meet the sterilization standards?
First, in order to achieve high standards of sterilization requirements, it is necessary to sterilize the air filter combined with the solid fermenter with steam and then blow it dry with air.
Secondly, after sterilizing in the tank, the long-term accumulated sewage in the solid fermenter feed pipe is discharged and washed. Especially when performing high temperature sterilization, the various exhaust components in the tank need to be unblocked. It should be noted that the exhaust volume of each vent hole should not be too large, and all should be based on saving gas.
